For making jam, is there any difference? Can I just use caster sugar?

preserving sugar has added pectin
Er - no, Mercia. 'Preserving Sugar' is for fruits that are already have their own high pectin content. It's 'Preserving Sugar', also known as 'Jam Sugar', that has added pectin.
