Sirloin steaks..Best way to do them.Oven cook, fry or grill also is it best to season them before,during or after cooking? This could also apply to fillet steaks if one can afford them..

Hi s o g - I follow anthony worral thompson on the cooking of steaks. I rub a little oil on the steak (rather than the pan) add cracked black pepper to one side immediately before adding to a hot griddlepan. I enjoy my steaks medium rare - depending on the thickness of the steak I watch to see the meat change colour up the side of the cut and then add oil & pepper to the top side before turning it over in the pan. Once the process is repeated I put the steak into a very hot metal dish (just big enough to take the steak) and pop it into a hot oven and then turn the oven off. I usually leave the steak in the oven for say 4-5 mins. Always comes out perfect for my taste. Personally I have never been that satisfied with grilling steaks - if not careful they are overdone on the outside and not properly cooked through (plus a fat-splattered grill to clean up!) . Some chefs say you should never turn the steak more than once - so trying to get a diamond pattern using a griddlepan will spoil the meat.

I like my steak mooing, DH likes his well done. I have a heavy Circulon frypan that I let get VERY hot, then whack DH's steak on, wait until the sizzling settles then flip it over onto another place on the pan and leave it alone. When it starts to feel a bit harder and more rubbery then I flip it again, wait a minute or two, toss mine in, wait a minute or two, flip mine onto a bare place in the pan, wait a minute or two, turn off the pan, let steaks sit for a minute then serve.
I like mine well done, OH likes his with a pink bit in the middle. We grill - then leave mine in a bit longer. Black pepper rub usually!

Thank you all for your help. I suppose it's up to the individual how one likes one's steaks....ttfn I never thought of putting them in a hot oven afterwards, I'll give it a try. ATB to you all.
My home cooked steaks taste just like they are from a restaurant since I bought a George Foreman grill - they are really good!
Agree 100% with the George Foreman grill. In fact, I had a beef steak cooked on mine this very evening.
