was just asking if you eat it. I know you can but tastes hideous. Think its supposed to be just a casing like the wax on edam
It is just a casing, so the mice don't get at it as it's ususally kept in cellars to mature...

Yes suzy ... the wax on Edam is like chewing a sort of gum. I like the texture.
its not just a casing, it forms as the cheese matures. definitely should be eaten :)

Definitely eat the rind - best bit of the cheese!
The outer casing of Brie isn't chalk - it's a mould that forms as the cheese matures. And most people do eat it. I like it since the flavour, with its hint of ammonia, goes well with white wines, (rather than reds)....

The thick rind / peel from Parmesan and Parmigiano Reggiano cheese added to soup makes soup more flavourful and delicious.
