If sea bass is cooked properly, the flesh should just fall away from the bones, as it does with sole and trout.

The flavour benefits greatly from the addition of some freshly ground black pepper.

Hi chris,my son cooked it too perfection and seasoned it well, but still i felt it was like a fish awaiting to be smoked for better flavour!
I like it.
So do i.
Questions:

1. How fresh was it?

2. Was it farmed or sea caught?

I can get both sea-caught and farmed and cooked well, I think there is a difference - the sea-caught one is rarely bland and like Chris says, falls away from the bones.
Baked in seasalt, a fabulous fish.
I agree however do not eat bass out as if it is not cooked fight then you get bones
galore.
