Could I use couscous instead of breadcrumbs to coat chicken etc. Would I have to cook the couscous first.

Have never tried, but if you do try it i would imagine you would have to soak it first or it would be like coating something with dried pasta. If you try it can you let me know how it goes, i would be interested to know :-)
i have topped salmon with it, beofre oven cooking. Dry it goes very very crunchy and softened it goes very stodgy.
Yes, you can. There are plenty of recipes on the internet and this will give you an idea.

I wouldn't recommend couscous.......but I have used polenta on fish and chicken. Season it before hand and it goes lovely and crunchy.

Thanks for your answers, I used dried couscous in the end to coat my fish cakes. The turned out quite nice actually, very crunchy but this was a nice contrast to the softness of the cakes. Will definitely try again.
