does anyone have a nice foolproof recipe for scottish tablet?

I've never heard of 'Scottish tablet'; it sounds like the name of a Caledonian religious newspaper to me! ;-)

However this recipe is from a site which contains nothing but Scottish recipes. It looks nice and simple!

Scottish Tablet

8oz Condensed milk
2oz Butter
2lb Sugar
1 cup of milk
Vanilla essence ( optional )

Bring the ingredients to the boil slowly in a large thick-bottomed saucepan and stir regularly.
After a few minutes, test consistency by dropping a little of the mixture into cold water ( it should be like soft putty), or use a sugar thermometer and stop heating when it reaches
240o F/108oC (soft ball).
Remove from the heat and beat with a wooden spoon until the mixture begins to solidify.
Pour into a greased tray and cut into bars.

its like a very grainy sweet fudge. Thorntons sell a not-totally-horrible version (although its even sweeter than the real thing!)

thanks all am gonna try and make it this week
Ma mum used to pour it into the lid of a large, square sweetie tin and scored it just before it set. Years ago we used to wrap it in greaseproof paper and sell it at 6d a bit at the school jumble sale. I've never heard it called Scottish tablet, just tablet.

My Mum used to make it too.
She made it in a big pot and poured it out into a baking tin , then scored it ready to break it up when it cooled.
My sister and I (and my Dad) used to eat all the pan-scrapings whilst they were still warm...and we then had all had enough tablet for some time. (It is very, very sweet.) So the neighbours/school pals etc got most of it.
I have tried to make it, but have never been very successful..could never get it to set properly.
I've never been any good at clootie dumpling either, though my Mum's were sublime. (Mine are Usually uncooked in the middle, or the cloot bursts, total disaster then!)
Granny was no good at tablet or dumpling either, so I reckon the ability skips a generation.
Or am I just daft ?

Take it slow with the heat at the beginning & stir thoroughly.
Make sure that the SUGAR IS ALL MELTED BEFORE IT STARTS TO BUBBLE to boiling point.
