I don't know if you have Clamato available in the U.K., but we've used this recipe here in the U.S. for years...

2 cups Clamato Tomato Cocktail
loaf day old French-style bread, crust removed, cut into half-inch pieces
3 plum tomatoes, peeled, halved
1 small green bell pepper, seeded, chopped
1 medium cucumber, peeled, seeded, chopped
cup green onions, whites only, sliced
1 clove garlic, sliced
 cup Sherry wine, cooking
 cup Lemon juice
 cup extra-virgin olive oil
 teaspoon cumin, ground
1 teaspoon paprika
 bunch cilantro, chopped
Directions
Place diced bread in a large bowl and cover with Clamato, allow bread to soak. In a blender or food processor, blend tomatoes, green bell pepper, cucumber, green onions, garlic, vinegar, lemon juice, oil, cumin and paprika. Add bread soaked in Clamato, puree until smooth. Adjust the consistency of the soup by adding more Clamato, if needed. Strain soup into a glass bowl, cover and chill for at least 1 hour. Serve in chilled bowl topped with chopped cilantro. (We skip the straining, like it with the chunks of vegetables still in).
ingredients:
6 Roma tomatoes
1 bell pepper
1 Anaheim pepper
1 cucumber (small)
2 cloves garlic
3 tbsps olive oil
2 tbsps vinegar
Croutons

Directions:
Crush or mince garlic. Add peppers, tomatoes, cucumber (peeled) and process in a food processor until semi-liquefied. Add olive oil gradually. Add vinegar and stir until mixed.
