paper cake cases

When making Fairy cakes, do you HAVE to use paper cake cases? Or can you just use the tray?

cases - think how much you have to peel a cake off them! if you put them straight in the tray, you will have one unholy mess on your hands x
You could just grease it to stop them sticking, but bear in mind that the sides will be cooked the same as the tops - i.e. not soft and pale.
If you have no cases you could make your own using greaseproof paper or baking parchment.
yep, a little square of grease proof paper works very well, and actually looks very nice, more sort of home-made.
