Whats the best way to cook herring?

Hi I would grease some foil and wrap herring in it and cook slow in oven. But if you google I am sure you will get lots of ideas there. Hope this helps.
It's lovely coated in oatmeal & fried. Ols Scottich recipe!

If they're herring fillets, I'd recommend them in oatmeal too. But many people just coat them in the oatmeal. The problem then is that it tends to come off when frying the fish. Instead, coat them with flour, egg and milk, then oatmeal. Scroll down here.
Herring is where God went a bit wrong. The taste is utter perfection, but those wretched little bones muck it up.

I fry them in butter, but at the end of the day, the simplest way into the the secret of the herring is via the specially reared boneless ones that Princes put into cans.
I love Herrings, I am going to try that with oatmeal.
