Sometime in mid-May or so, we, along with several neighboring ranches here in the western U.S. will get together to "fix" the new calves. (Don't ask if you're even a little bit squeamish). Nice thing is, after a long winter it's a great time to see the neigbors and have a great dinner. Along with everything else, Mrs. C will take her Cowboy Beans in a very large Dutch Oven... they are enjoyed by everyone ...
Ingredients (Keep in mind we triple or quadruple the recipe)
1/2 pound lean bacon
1 pound ground chuck, lean
1 large onion
1/4 cup green pepper, diced
1 can pork 'n beans, 16 oz
1 can red kidney beans, 16 oz
1 can butter beans, 16 oz
1 can baby lima beans, 8 oz
1 can great northern beans, 16 oz
1/4 cup brown sugar (dark is best)
1/2 teaspoon dry mustard
1/4 cup molasses or maple syrup
1 jar barbecue sauce (your choice... we like it hot)
1/2 teaspoon pepper
PREPARATION:
Cut bacon into 1/4" bits; brown in a large skillet. Remove bacon from rendered fat and set aside. In the bacon drippings, saute the onion & pepper until tender. Add the ground meat and brown lightly. Put the meats into the bottom of a crockpot (or Dutch Oven).. Add the Pork 'n Beans with the liquid on them. Drain most of the juice off of the remaining cans of beans and add them with the remaining ingredients to the crockpot. Mix all well. Cook on HIGH setting for 1 hour to get well heated through, then lower heat setting to LOW and allow to cook for 5 - 6 hours. Stir from time to time. If in a Dutch Oven, use 350 degrees F in the oven for about 4 hours...
Check on seasonings and correct if desired. A little more brown sugar or syrup might be needed for your taste...

Enjoy!

Oh clannad you so went out of the way for me, but here in the uk baked beans mean heinz so to speak! tinned baked beans in tomato sauce, your recipe sounded fantastic but sadly i havent got access to some of your ingredients! but thanks for your recipe what part of the states are you from?
Hi puddicat
This is something I do
In a saucepan put about a teaspoon of oil, add some black mustard seeds & let it crackle & pop, turn off the heat. Now add a quarter teaspoon of minced ginger, minced garlic, a tiny bit of tumeric and about half a teaspoon of chilli powder (or more to taste) turn the heat back on, stir well and serve with naan or you could have it on toast.

You can also add it to spaghetti bolognese, a stew or casserole.
loads of recipes if you google baked bean recipes
lol puddicat... Clanad's recipe sure does sound good (and I'm a veggie hehe)... ok, back to the recipes for baked beans...

Why not fry up some chopped vegetables (onion, garlic, celery, mushrooms, peppers, courgettes etc etc, add a few spices (say smoked paprika, mustard seeds, chilli and cumin seeds), a can of chopped tomatoes plus a can of water, a can of baked beans as well as a can of some other bean (eg chick peas, borlotti beans, pinto beans - whatever you can find, just make sure you rinse the *other* bean of the salt/sugar mix before adding them to your new PUDDICAT BEAN STEW..... (don't rinse the baked beans, the sauce is important !). This stew will be great served up on day one with say rice, on day two with pasta, on day three with couscous and on day four (if it lasts that long) undercover as a veggie cottage pie...
Sorry forgot to mention to add the baked beans when you turn the heat back on and mix the spices

Thanks jack will try your recipe with great aplomb!!!!
Baked potato, cheese and beans with loads of HP sauce. I put a tin of beans in my shepherds pie! Onion, mince, beef oxo cube, 1/2 pint water, good squeeze tomato puree, worcester sauce and tsp mixed herbs and tin of beans. Top with mash and grated cheese, grill until brown.
baked beans in base of oven proof dish. Cubed corned beef on top of beans . Add fried onions ( 1 or 2) . Slice some cheddar on top of onions. Top with mashed pots and grated cheese and bake for 30 mins 180 degrees. Sometimes i spread marmite on each slice of cheese. Yum Yum . Also do it with veggie sausages sliced and fried first with the onions. One of our family favourites. Great with dark green cabbage or spinach.

Naomi what i can i say cant wait to try your recipe!its total comfort food ummmmmmmmmmmmm!!!
Clanad's recipe sounds great and I feel sure that we can purchase all the ingredients in the U.K. However, I've never heard of Great Northern Beans; what are they.,?......Ron

Great Northern's are a medium sized white bean... a rather local variety grown in the western U.S. and noted for their flavor due, primarily to the sanyd soil and irrigation techniques necessary in the arid west... Any good white bean would do nicely, Ron....

Hi clanad, can i ask what ground chuck is?
Question Author
ILS I think its minced beef i could be wrong!
Ground chuck is our better grade hamburger... I think ya'll call it mince, no? It is less fat and a better texture than the cheaper cuts of ground beef...
Thanks fo rasking...
