Rice n black eyed peas with pork chops and plenty of gravy!

1 1/2 cups dry black-eyed peas
1 pound ham hocks
1 onion, chopped
1/2 teaspoon crushed red pepper flakes
salt and pepper to taste
4 cups water
1 1/2 cups long-grain white rice
1 cup shredded smoked Cheddar cheese

Metric:
250 g dry black-eyed peas
455 g ham hocks
1 onion, chopped
2 g crushed red pepper flakes
salt and pepper to taste
950 ml water
280 g long-grain white rice
115 g shredded smoked Cheddar cheese

In a large pot place the peas, ham hock, onion, red pepper, salt and pepper. Cover with water and bring to a boil.

Reduce heat to medium-low and cook for 1 1/2 hours.

Remove ham hock and cut meat into pieces. Return meat to pot.

Stir in the rice, cover and cook until rice is tender, about 20 to 25 minutes. Season to taste with salt and pepper.

Sprinkle shredded cheese over top, if desired.
Texas Caviar

2 (15.8 ounce) cans black-eyed peas, drained
1 (14.5 ounce) can petite diced tomatoes, drained
2 fresh medium jalapenos, stemmed, seeded and minced
1 small onion, cut into small dice
1/2 yellow bell pepper, stemmed, seeded and cut into small dice
1/4 cup chopped fresh cilantro
6 tablespoons red wine vinegar
6 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1 teaspoon dried oregano
1 1/2 teaspoons ground cumin
tortilla chips

Metric:
2 (15.8 ounce) cans black-eyed peas, drained
1 (14.5 ounce) can petite diced tomatoes, drained
2 fresh medium jalapenos, stemmed, seeded and minced
1 small onion, cut into small dice
0.5 yellow bell pepper, stemmed, seeded and cut into small dice
10 g chopped fresh cilantro
90 ml red wine vinegar
90 ml olive oil
3 g salt
1 g ground black pepper
1 g garlic powder
2 g dried oregano
3 g ground cumin
tortilla chips

Mix all ingredients in a medium bowl; cover and refrigerate 2 hours or up to 2 days. Before serving, adjust seasonings to taste, adding extra vinegar, salt and pepper if needed. Transfer to a serving bowl. Serve with tortilla chips.
FYI - In the UK, ' cilantro' is known as 'coriander'

We have coriander here too, but it is the seeds of the cilantro plant. We call the plant/leaves, etc. cilantro.

beryllium honey - I am glad you liked it!!! I had it in a Mexican restaurant years ago and decided to make it at home. I love it too - although I put in more onion and cilantro in mine because I like it better that way - and after it stays in the fridge overnight so the flavors blend it is even better!!! Even people who don't like black eyed peas like it :)
