wrap each scallop in a piece of bacon and thread on a skewer along with some veg, brush with oil and grill. i would allow 5 or 6 (or more) scallops per person. i could eat a dozen easily.
I cook mine for 1 to 2 minutes each side in a frying pan with butter, sea salt & black pepper. Sometimes I might throw in a glug of white wine. I think scallops have such a fantastic taste it's a shame to cook them in any type of sauce.
I'm available as a professional scallop taster should you need me lol
so am i!!

What would you serve them with?
More scallops?
When I cook them I always serve them with a simple salad. Last time I made a green salad and a tomato & basil salad. This applies whether I serve them as a starter or a main course.
I usually allow 4 per person for a starter or 6-8 per person as a main course, depending on their size.
....and make sure you use the corals as well. They have a different taste & texture to the white meat but they're equally delicious and add colour to the plate.

The ones I have don't have the corals on them unfortunately. I want to make something quite substantial as hubby and I have hearty appetites!!
erm....mashed potato then!
Simplest recipe I know:

Infuse some oil with garlic and red chillies. Fry the scallops in butter so that they get a lovely caramelised brown finish on them. Toss some cooked spaghetti in the infused oil. Add the scallops, making sure you get all the juices from the pan, and some fresh parsley. Serve on St. James's day!

Never thought of doing them with pasta....mmmmm
Cook them together with prawns in a marinara sauce and served over any type of pasta is delicious; and a green salad, red wine is a lovely meal.
