Flemish recipe for Varkenstaart, please!

I ate a fantastic pie in Bruges over the weekend. The Chef in the bistro told me that the pie is called Varkenstaart and contains both minced pork and the meat from pigs trotters with cream, but his English wasn't up to giving me the recipe, and my Flemish wasn't up to interpreting what he could tell me about how to make it. The inside of the pie was very soft and light, like a pork mousseline and so tasty that I wanted another piece! I've had a bit of a search round, but can't find a recipe - can anyone help, please ? I'd love to make it myself! Many thanks!
