During the World Cup in Germany I had roast pork knuckle. I have managed to buy one here but I am not sure how to cook it! I know to roast it but how?? Any help?

Pot roast it as the Germans do. We call it Schweinehaxe or Eisbein.Brown it all over in some unsalted butter.
The when it is sizzling hot tip about half a pint of water and white wine over it .Half water half wine Add chopped onions ,celery ,carrotsleeks,chopped fresh parsley.Put a lid on and simmer it on the lowest heat for about two hours.
Or you can roast it.
The skin of the meat should be crispy and deep brown. How long it will take, depends on your oven and the size of the knuckle.I would go for 30 minutes to the pound and thirty minutes over .Basting often.

It was delicious.
I just roasted it for about an hour and a quarter.
