I bought some extra virgin olive oil by mistake the other day and i was wondering what are the differences between EV and normal oils.

Can i still cook with EV.....do my stir-fries etc or should i use something else.

i use it for salad dressings mainly and yeah use it for your stir fry's
extra virgin is really too good for cooking and it burns easily. use it for drizzling on salads, crusty bread or for making dips. enjoy!!!
Extra Virgin is as cherryelm says a bit too expensive and specialised to use in your stir-fries.

I use Sesame oil for wok cooking. We all love the clean, delicate nutty flavour and despite what others may say it doesn't burn at high temperature - well, it hasn't yet in five years ;-)
It's traditional in some Greek villages to use young virgins to tread the olives and extract the juice.

Apparently the best juice is righ in the centre of the olive, and to get that out, they use an extra virgin in the treading process to get more weight on the olives.
