garlic bread

Has anyone got a good recipe for garlic bread? I know that you simply mix garlic and butter together, spread it on bread and chuck it in the oven, but I tend to find that I either put too much garlic on it which overpowers it or too much butter, which makes it go greasy and then I tend to overcook it or undercook it!
Anyone got a foolproof recipe?

Many thanks, I always used much more garlic than that! Probably why my garlic bread is not up too much.
I will give it a try.

Garlic Bread

1 pound loaf of crusty french or italian bread
1/4 cup of butter
8 garlic cloves, minced
1 tbsp of fresh parsley
1/4 cup of grated Parmesan Cheese

Preheat broiler. Cut bread into 1 and 1/2 inch thick slices. In skillet, melt the butter over medium heat, then add the garlic and saute for 30 seconds. Brush one side of each slice generously with butter. Sprinkle evenly with parsley and Parmesan. Place under hot broiler until crisp and golden...mmmm...
Far better to have slices of bread and toast them under the grill. Use a flattish round loaf, crusty of course, and fairly thick slices. Toast one side and then spread the garlic butter on the other side and lower the grill to about half full power. Defintely crush the garlic one way or another and mix well with the softened butter. The amount you use will depend on how much garlic you can take! If you find that raw/slightly cooked garlic is not for you, then do as lia suggests and very gently saute the garlic before using it.

my butter tends to disappear & i end up using loads...what butter do you recommend?
heres an option for when you cant be bothered to do all the crushing / chopping / mixing...

take one garlic clove, peel it and cut in half. do some toast (toasted on each side). butter it as you would normally. then rub the raw edge of the garlic over the buttered side a few times. so simple and it works very well. if you were cooking for friends, i reckon you could cut into triangles and garnish with something (just to make it look more presentable than toast)!
