The 'stuff' that explodes is carbon dioxide. The candy starts as melted sugar and flavouring, which is mixed with carbon dioxide. Bubbles of CO2 are trapped inside the candy as it cools. When the candy melts in your mouth, the bubbles pop and the CO2 is released at 600psi (yes, 600!!). It's actually patented.
