Basic pasta sauces

Can anyone give me some basic pasta sauce recipes that are slighly diverse so additional ingredients can be added Eg a basic tomato sauce or bolognese or creamy sauce etc..


Or a website with this kind of thing on... I want to make things from scratch and not always from a tin or packet.

Diced onion fried with garlic til soft. Add crushed tomatoes - tin or fresh - a few anchovy fillets (or a/paste) and squeeze of tom paste. Season. Cook for 5 mins.


Use as a base for ragu with meat, - beef, chicken, pork, mince etc. Use as base for veg sauce with olives, celery, sun dried toms. Add mushroom, bacon, chili, herbs to suit.


Thinl of pasta as a way to 'hold' a sauce. Really picky eaters will always stick to the regional speciality of an area - no parmesan on your Sicilian sauce, etc etc, but have a look at this - 1200 ideas to play with, inc using eggs, ham, cream, spices, tomatoes, nuts, cheeses, herbs, meats, fish, lemon, cream, - vodka (honestly) wine and just about any combination of ingredients.

have often had to make 100 portions or more , and the easiest way was as follows (scaled down , of course )
Into a pan of boiling water put your frozen veg ,macadoine etc.mushrooms ,onions ,peppers ,peas and pasta .
boil till the pastas cooked ,strain off . and cool under cold water to stop any further cooking .
At this point you can split the pasta to make veggie option .

I often just slice a couple of cooked sausages , add a tin of tomato's , garlic puree and away you go .
I've just made the easiest, yummy tomato sauce. I cut tomatoes into quarters, chop peppers and add some garlic. Put on a baking tray, drizzle with olive oil and balsamic vinegar add salt and pepper to your preferred taste, mix together with your hands then roast in the oven. Takes about half hour. Then I put it all in a saucepan and add some fresh basil leaves and depending on whether I am making soup or sauce I add veggie stock. Blizt it all up and taste. Delicious and very healthy and of course you can add different veggies or bacon if you fancy, I make a vat and stick some in the freezer too! Jxx
