It's a sandwich filling widely found across the North of England - I recently discovered it in Cumbria. Does anyone have a recipe for it?

If it's the one I think you mean try:

Grated cheese (probably cheddar), mayonnaise to bind, chopped spring onions, salt, pepper and the secret ingredient: a jigger of mustard powder or English mustard.

I remember they used to make 'cheese log' (always hated the name!) when I lived in Leeds, could it be that?

It was grated cheese, mayo and chopped up celery, onion, peppers etc, worcester sauce/mustard all mushed up and put together into a log, cling filmed and refridgerated. you can then slice it. It's v scrummy

Dingoeater we crossed! We should be able to get points for that, or summat
I'm from Middlesbrough and I make it with cheddar cheese, grated carrot and finely chopped onion all mixed together with mayonnaise. MMMM scrumptious
It's not just found in the North of England, Greggs in Mumbles, Swansea do a cheese savoury sandwich aswell, or did last time I was there.
Here in the USA it is sold in every grocery and convenience store. It is called Pimento Cheese Spread. It is grated cheese, mayo and pimento. If you buy the Hot Pimento Cheese Spread, they have added jalapeno pepper - just a small amount. It is great on French Bread.
The recipe needs a few things added, a chopped tomato a stick of celery and you can put a chopped boiled egg in if you like, you can also experiment with salad cream instead of mayonaise.
It is very popular in Cumbria which is where I am from.
