Serve with sour cream for a 'tart' edge (make your own - dash of lemon juice into cream and let it stand for 20 mins); cook the veg and meat with a little cumin, chilli powder, mixed herbs and cinnamon powder; add some fresh herbs to the salsa - basil leaves, coriander etc; heat the tortillas over a gas flame to char them - always adds a nice texture; add some rice as well if you fancy - cook in stock for a full flavour and add some peas or kidney beans to it.

brilliant - just got the message as i was going to go and make the bland version! brill thanks i have most of that in! your a star!
sour cream and avacodo goes down a treat
Too late for this time, but for next buy a little jar of BBQ seasoning (dry powder you can buy in Tesco/Asda etc at herbs & seasoning) sprinkle on chicken an hour before cooking. It's not spicy, but gives a beautiful smokey flavour to the chicken.
Try mexican refried beans aswell they are yum!
