Chicken Fried Rice?

Can anyone help me.


I'm looking for a chicken fried rice recipe and i'm confused. To make egg fried rice, some websites say add the egg first and on others add the rice first?


Very confused, does anyone know the right way to make egg fried rice? Was hoping to just add cooked chicken towards the end.

Put the (beaten) egg in first, scramble, then add rice; that way you end up with bits of scrambled egg in amongst the rice. Otherwise, you end up with rice coated in egg. Perhaps the other websites assume that you've already scrambled the egg.

My half chinese sister-in-law taught me how to make perfect egg fried rice as i had never had any sucess before. alfiebrady is right, but another secret is to cook your rice and then let it go completely cold before adding to the pan.I don't know why, but it works done this way.

Like any recipe, there will be one way preferred to others. Most instructions will tell you to cook all the ingredients and either:


a) Empty the wok/pan, wipe with oil, then cook beaten egg to a 'light' omlette sort of finish. Chop it up and add the cooked rice/veg back to the pan, heat through and serve.


Or


b) Cook the veg and rice etc, and in a seperate pan cook the beaten egg. Dice and add to the rest of the rice mix.


or


c) Cook the veg and rice, and add beaten eggs to the mix and stir in to 'add body' and leave as a sort of scamble finish.


Just depends on what you like...

Agreed. Definitely is better with, say, day-old rice that's been kept in the fridge. Reason is, you don't want soggy rice in the pan other wise it'll mush up when you toss it. In fact, it's a good recipe for leftovers.
