How do they get bubbles in chocolate such as aero and dairy milk bubbly?

I remember going to the Rowntree factory in York(many years ago!) and I think they boiled the chocolate to get the air bubbles in and then chilled it really quickly so the bubbles burst.
What on earth, my answer was banned? It was given with pleasant intention. Well, if you missed it, it involved people releasing waste gases into the mixture from a certain orifice.
I believe they create a vacuum around it, which causes any air trapped within the mixture to bubble. It will then set if left to its own devices
