I'm due to do some buffet food for a friends christening. Does anyone know if i can cook things like filo parcels and mini yorkshires the night before or will that ruin the food? also anyone have any quick and easy recipes

Hi there Eejit, what about a huge bowl of coleslaw...


1 White Cabbage finely shredded


2 onions finely sliced


2 carrots grated


Mayonnaise to coat


Mustard powder approx 1/2-1 tsp


Put all ingredients in a bowl and mix well with a little salt and grated pepper


You can do a large rice salad...


Good amount of cooked rice


carrots grated


spring onions chopped


celery finely sliced


cherry tomatos 1/2 ed or 1/4ed


handful of sultanas


mayonnaise to bind and a little seasoning..


Broccoli Salad....


Raw Broccoli cut into little florettes


Red onion finely chopped


Streaky Bacon cooked till crispy and finely chopped


Sesame seeds to sprinkle on top


1/2 pint mayonnaise top to 3/4 with cider vinegar and stir in 2 tblsp of granulated sugar, this is the dressing and it should be semi sweet but not too sweet so taste as you make and alter as you see fit.


In a big bowl, put all the ingredients in and stir in the dressing then top with sesame seeds.


This is always better the next day as the broccoli seems to soak up the dressing and it does improve overnight.




I love buffets, they are just so easy and uncomplicated...


I usually go for a few salads, you can make most of them in advance:
Cabbage
Potatoe
Pasta
Sausage


Then little burgers and chicken wings (cold)


Lots of Chips and Dips
Cut up some cucumbers and carrots, they can be dipped, too, I would not do that the day before, though.


Maybe a Lasagne, you can make that the previous day, and then just heat it up.
Same with Quiches, but those you can also serve cold.


Anything with filo pastry I would cook fresh, it simply tastes better.

Thanks. I'll try them all. My only problem is that the christening is ay 12 noon. thats why I want to do as much the night before. I'm also god mother so i have to spend time making myself look pretty as well. Thanks again.
