Perfect omlette

Can anyone tell me how to make the perfect omlette. Milk or no milk, perfect method and the best fillings. Not had one for about 4 years and am planning on making one some time this week!

You need a good,small, non-stick pan.

Heat a coating of oil in the pan.
Beat three eggs in a basin
Pour half of the egg into the pan and top with the filling or your choice, add remainder of egg. Cook for half a minute and then place under a hot grill to brown the top.
If making a cheese omelette, a sprinkling of grated cheese over the top before placing under the grill can make it even tastier.

2 med eggs, 1 tbsp cold water. Season. Whisk.


Heat knob of butter in pan 'til melted, add egg mix, and using a fork, as the egg cooks, whisk the omlette gently in the pan. Don't scrape the base of the pan but turn the fork through the egg.


This brings air into the mix and lifts it from being too solid and heavy. Omelttes should not be a thick solid sheet cooked through but have a light texture in the middle.


Add filling. Check the base is lightly browned.


Carefully tip half the omlette from the pan out onto a plate and 'fold' the other half over to make the presentation.

The secret of a good omelette is a good pan, and the right heat. Ideally, use an omelette pan, otherwise use a small skillet/frying pan. Over a med/high heat, melt a knob of butter in the pan until sizzling...pour in 3 eggs(lightly whisked with salt & pepper), this should sizzle immediately as it hits the pan. Move the egg around the pan with a palette knife/spatula but being careful not to scramble. When there is only a thin layer of uncooked egg on the surface of the omelette (after around 1-2 mins), turn off the heat, add a little grated cheese, and carefully fold the omelette twice in the pan(creating 3 folds, rather than just folding in half). Leave for 1 minute. The residual heat in the pan will finish cooking the omelette to perfection. When eaten, the omelette should be lightly spongy on th eoutside, and very slightly runny on the inside. Mmmmmmmm. I'm hungry...
Don't forget the good old spanish tortilla, they are delicious hot or cold. Google spanish tortilla and take it from there, I don't think you will be disappointed.

you could try this - i love it!!

heat a drop of oil in a non stick fryin pan, add mushrooms, onions, peas and sweetcorn, when cooked add three beaten eggs (with salt and pepper). Add grated cheese straight after you added the eggs. When its cooked put the pan under the grill to finish it off - Perfection ( hope you understand that - im not the worlds best cook! )

i alway add a dash of soy sauce and herbs to the mix
