Champagne (Cava) cheesecake

Further to my Father wanting to try and & freeze his half bottle of Cava!!! I have persuaded him to do somehhting with it - any ideas of recipes, Champagne (Cava) cheesecake etc?

You can make a lovely sorbet with Cava/Champagne. Sorry I don't have a recipe to hand, but a quick Google would probably get you one. Enjoy!

I haven't road-tested this but here you go:


Cava sorbet:


1 cup water
1/2 cup sugar (caster?)
1 cup your dad's cava

1. One day ahead: Combine water, sugar, and half the wine in a sauce pan.
Stir to dissolve sugar; bring to a boil. Reduce heat and simmer 3 minutes.
Allow syrup to cool.

2. Add remaining wine to syrup. Pour into a shallow container and freeze
overnight.

3. Two to four hours ahead: Remove frozen mixture from freezer. Transfer to
a food processor and process until smooth, about 20 to 30 seconds. Return
mixture to freezer container or individual serving glasses and return to
the freezer to set.

4. Remove sorbet from the freezer 5 to 10 minutes before serving

Tell the tight old buggah to sup it and have done with it!

Add the Cava to any jelly instead of water....for a fizzy on the tongue delight.


While we're chatting about what to do with this half a bottle we could have drunk a whole one!
