Have just made a huge pan of this with week old carrots, leeks, celery and the leftover broccoli and cauliflower cheese from last night (there’s not usually leftovers but it was a canon ball of a cauli and a huge head of broccoli).
Added a chicken stock thing, half a beef stock thing, and some heat with a bit of chilli sauce. And snapped in some vermicelli pasta.
Will be having it with sundried tomato bread.
Yum, just what we need on a cold dark evening.

Lovely, I make a lot of soup.

I do too Barry, such a great way of using veggies a bit past their best. No two of my soup creations turn out the same, I just use what’s there and add whatever seasonings appeal on the day.
Same, although I do buy celeriac specifically to make soup, it’s on in the reduced bin at my greengrocer
How funny, I did exactly the same thing a month or so ago. Doubt I could recreate the same thing as it was literally odds and ends of veg etc, but tasted good lol
Good way to use left over meat, too. I even put left over pasta in mine, pearl barley and lentils are good if you like a thick soup. Left over mash will disappear in a slow cooked soup but also thicken it.
If you've ever got a huge head of cauli that you don't know what to do with, make Cauli pizza.
If you want the recipe , I'll post when I get home.
I don't eat pizza

Thanks pasta but I really couldn’t be bothered doing that, plus I/we really like cauliflower just the way it is, especially with a bit of cheese sauce. A pizza in this house is a quick easy meal, chucked in the oven.
We eat so little meat these days I can’t remember when we had leftovers..apart from last nights chicken thighs, which we had in a sandwich today for lunch.
I used to blend any soup I made with a stick blender but lately I’ve not bothered, I just chop everything up fairly small and don’t drown it so there’s plenty of texture.
It's not pizza in the usual wheat based sense.
The base is made of cauli, eggs, mozzarella and herbs.
I thought vagus might be interested.
It's quite easy to do...but if you can't be bothered...OK.

It does sound nice, pasta, and I know you don’t eat carbs, but the thought of faffing around with the cauli then making a sort of dough with it puts me off.
Pasta - I was in the US for thanksgiving last year and we went to Aldi to stock up on pizza. Their cauliflower base pizzas were great. You couldn't tell the difference.
237...the one I make...you *can* tell the difference. Maybe that's why I like it.
I've heard of Aldi cauli pizza bases...but not come across them. Probably not available here...yet.
Pasta, please post your pizza recipe.
Husband loves a pizza but he needs to up his veg intake. This might help.
Recipe posted!
