Yes, the little flap of the chicken breast - some folk cut them off and dust in flower and breadcrumbs
flour that was meant to be, breadcrumbs and fry them
Without googling I'd guess the supreme of the breast?

Yup, no idea why they are called tenders though, the have a fascia running through them
I was always taught that strip part of the breast was called a supreme - I know a Chicken Supreme dish is also a way of cooking and that's different.

I do remember butchers selling 'chicken supreme' that was a chicken quarter - breast and wing
M&S use the phrase I noticed. I think it must be of American origin. Can't think how else they'd have dug up the description. If the chicken in breadcumbs wasn't tender I'd be having some words with them.

Bits of chicken in breadcrumbs are goujons as far as I'm concerned.
I've just checked the M&S website and their 'tenders' are listed as 'chicken breast' not particularly the part called 'tenders'.
We called them chicken tenders as we went to school and did home economics - I know they are often used now to make goujons and the like

Chicken Tenders - that staple of American bars along with nachos, buffalo wings and a shed load of Budweiser.
We don't get many Buffalo flying round Bolton thank goodness;-)
The chicken version of that staple in Barbados - flying fish goujons, jerk chicken and a shed load of rum punch :)
