I have bought chicken thighs for my dinner to use this weekend. I would like to make a soup or some kind of winter warmer. Any Ideas. I also own a slow cooker so could use this to cook up a storm. ;o)

Take the bone out of the thighs and fill the gap with a fruity stuffing. If you don't fancy making your own, you can use Paxo, and mix in some finely chopped bacon, diced fresh onion, chopped dried apricots, raisins etc.

Put them back together, then wrap the chicken with a couple of slices of stretched streaky bacon to hold it all in place (use cocktail sticks if necessary). Roast as normal. Serve with a good rich gravy.

Winter warmer? Chicken and homemade noodles, of course!

Here you go, from our house to yours: (I've even changed the ingredients to metric for you)

3.00 egg yolks
1.00 whole egg
44.37 ml cold water
4.93 ml salt
473.18 ml flour
Beat the egg yolks with the whole egg until very light.
Beat in the salt and water.
Stir in the flour and work with hands until blended.
Divide dough into 2 parts.
Roll out each part as thin as possible (about 1 quarter inch works well) on a lightly floured board.
Let stand until partially dry, at least 1 hour, then roll up like a jelly roll and cut into strips of any desired width. We like about 1 half inch).
Shake out strips and allow them to finish drying before using or storing them.

Cook chicken in tall pot until tender and coming off bone. Remove, reserve all liquid (we cook ours in canned chicken broth... about 3 to 4 cups). De-bone chicken and return to hot chicken broth along with the noodles you need for the meal. We add, for say 4 people, about 2 cups sliced carrots, 1 large onion, and celery if you like. Salt and pepper to taste... Enjoy!

Yum Yum, both these recipes sound just delisious! Cant wait to try them both out.

Thanks :o)

I marinate the chicken thighs in some soy sauce mixed with water, some italian spices, garlic powder, and something called Liquid Smoke..I microwave them med-high power, 7 minutes on each side. I don't care for chicken thighs but my husband LOVES this recipe! :)
A simple Coq au Vin is perfect for chicken thighs.

Pinkiefriend,

For the best winter chicken soup ever boil chicken thighs until the meat is falling off the bone. Disgaurd skin and bones but keep the stock. Add any vegatables you wish but make sure you add spring cabbage and leaks. I usually also put carrots, swede and a couple of potatoes in. It is yummy.. trust me!

One of the best winter warmers I know is to basically make a stock (call it a soup if u like ) Take raw or cooked Chicken bones (your thighs par example) put in boiling water with carrot, Celery, small amount of onion and garlic, a small amount of any left over veg roots eg. cabbage stalks and boil for a couple of hours - then put through a strainer - pick out the bits of chicken and re introduce them to the stock - thats about it but don't practise it on your friends until youv'e got the mix right - that takes a while to learn. PS I think certain ethnic groups give this liquor to there sick ! Good luck.
Roast the thighs slowly cooked in foil. Release the juices into a jug. Add chicken gravy stock, salt & pepper. If you add a tin of sweetcorn, it is delicious. Pour the sweetcorn plus the juice into the stock after heating it up slowly. It is lovely. I usually do it with a whole roast chicken so not sure how much juice you will get from chicken thighs. You need to stop the juice dryng out so keep it well covered with foil before it burns away.
