I absolute love oysters and my favourite Seafood restaurant which I had been visiting for more than 20 years closed down. I often walk past the fish stalls and think about buying some oysters and enjoying them with Tabasco and onion vinegar. Hasn't happened yet, as I attempted to do them myself, but all I end with is a pile of shells. PLEASE HELP

Yes, I have an oyster knife (also bought in France) - much easier.
^^^ PS Try sprinkling bits of garlic and herbs on top of the half in the shell and flashing them under a very hot grill for half a minute - just for a change - gorgeous. A French friend showed me that one.
