At the weekend I made a lovely Thai Chicken Curry from fresh and scratch. How many days can I expect it to keep in the fridge and still be okay to eat??

Could you not freeze some of it?
So long as it was refrigerated as soon as it was cooled, and you heat it up well, it should keep for up to 3 days

It is a cheat recipe

Stir fry some chicken breasts then add a good dollop of Sainsbury's red thai curry paste (I use about half a jar for 4 chicken breasts) Cook that for a couple of mins then add a can and a half of coconut milk. I then add some fresh sliced french beans and peas to give a nod towards the old veggi thing and make it go a little further.

I serve it with egg fried rice which involves pre cooking some rice and chilling it in the fridge. scramble an egg or two and then chuck in the rice. I also add a little fish sauce to the rice, but only a small bit cos man t hat stuff has a kick to it.

That is the quick version,but let me know if you want a recipie for my own special red thai curry paste, but Sainsburies taste's just as good and is much easier and chreaper in the long run
