Have a pile of courgettes to use.  Not keen on them own their own, any ideas for some tasty recipes?

Why don't you bung them in a nice stir fry, that way whatever sauce you use will help to cover them !

 

Courgettes are good in stir frys.

I once made a courgette and chocolate cake... nobody knew there were any courgettes in it! There's a good recipe here

We recently had courgettes the size of marrows and my mum made some of them into soup with other ingrediets. She got the reciepe of a website she found on google. If you want to seach for recipes on the web it might be worth putting "zucchini" in as well because thats the US word for courgettes. Another very nice idea is stuffed courgettes then you could fill them with something you really like.
Try making some Courgette and Ginger Jam, I love it.
We'll sometimes have them cooked in a dish with tinned tomatoes and cheese melted over the top.
Try this:

Courgettes au gratin

3/4lb courgettes
small carton double cream
3-4oz cheese, grated
1-2 eggs

Wash and cut off ends off courgettes and then slice. Place in boiling water salted water for 5 minutes. Drain. Beat up eggs, add a little milk and carton of cream, mix well, add grated cheese and mix again. Grease a flan dish and put in courgettes, pour mixture over and bake in oven gas 5-6 for 45 minutes.
I had courgette rosti recently and it was yum.  I also like them cut into thin strips, dipped in batter and deep fried until they are crispy.  Absolutely gorgeous.  Ratatouille is always a favourite too and you can freeze that for later in the year.

Thanks, all for you ideas, going to try all of them.  I ended up shoving them in a dish with some olive oil, tinned tomatoes and some kidney beans i had in the fridge, roasted them with garlic and the were bloody gorgeous!!
