stir-fry is quicker, though less healthy than oven roast, depending on what oil you use.
I always thought stir-fry was healthier because you fry it so quick the food doesn't really have chance to absorb the oil?
I would agree that sirfrying is much healthier,  less oil is absorb,  and the vegetables retain more vitamins an minerals due to the shorter cooking time.
And stir fry is also a lot cheaper, using only a few minutes of gas or electricity, instead of the 40 - 60 minutes you would use in an oven, which is good if you're on a tight budget..
