Was at a christening on Saturday and the baby's cake was simply divine.

I never ever tasted a cake so moist and I nearly would say oil had been used. Would I be right.

Don't know JJ . Why don't you ask the parents? If they didn't bake it, perhaps they can give you the name of the bakery.
I know what you mean, so many cakes are like dry old lead, it's a treat to find a really yummy one.

Oh my friend's daughter (aunt of baby) her friend baked it. As you say Janbee - so many cakes taste like sawdust.

May get this friend to bake me a nice cake for Chrimbo.
Don't forget to send me a slice JJ xx

Don't think it would make it through the post as it was a deffo melt in your mouth cake so you would receive it in a crumbly fashion.
Don't worry about that JJ. I'll eat it with a spoon or maybe even a straw, just send it !
Was the cake a sponge or a fruit one?

sponge
Hi jenny,
If it had a rich buttery taste I doubt oil was used. Oil can be used for a 'moist' cake, but it loses that rich taste. Might it have been an angel cake consistency with buttercream? http://www.anchordairy.co.uk/recipes/angel-cake

Have just found that the said baker sells her wares in the local market in Belfast on a Sunday. A bad day for me to shop but I do know a lady who goes every Sunday and when I get more info re the baker will get this friend to get me a wee cake.

Elina the actual sponge was very moist like if you inspected the cake - wee tiny holes in it.
Hmmm, I'm baffled Jenny ;0)
May be it's the amount of eggs in the recipe jenny that would really aerate the sponge? Also it seems whipping the egg whites gives a cake a light texture .. http://www.ehow.com/how_8276347_make-moist-airy-cake.html
