Can anyone define a UK version of the above description which I'm fairly sure is an American term.

It's a sprouted grain bread .
if you are into this - try King Tut's Bread - not bad, a little haszelnutty
they are about contemporary. uses an early low yield triticum

Pesumably they think it is ithe bread the Essenes ate in the wilderness around AD 0. whether it is is anyone's guess.
Its a sprouted wheat bread...that's the only ingredient. No raising agent. I read about it a few years ago...but could not find recipes. Now there seems to be quite a few. I don't know if there is a commercial version available. You'd have to look in a whole foods shop.

Thanks guys- that's all given me food for thought and I might venture into making one or two loaves -if I can get hold of the wheat sprouts in H & Barretts....
