Coconut Jelly

I have now tried 3 different internet recipes to make coconut jelly and each one has been a failure. When I put it in the fridge to set it always splits.
Does anyone have a foolproof recipe please?

My auntie used to make coconut jelly with agar agar (seaweed extract) rather than gelatine. I couldn't tell you any more though, sorry
They sound lovely Mrs O. I only buy the jelly cubes and after putting the hot water to dissolve, I wait until its cooled right down before adding cold water or fruit juice and never put in as much as it says, so that its thicker and sets quicker. Has anyone tried adding jelly babies or jelly worms etc. Ive thought about it a few times and wonder how they would set

What are you using t make the coconut jelly? Creamed coconut in a tin? Desicated? creamed coconut from a bar?

I just make up a can of creamed coconut to just under a pint and add the geletin
