and has anyone got a good recipe for puff pastry that actually works

You could cheat and get the frozen ones...........................

Just use the frozen ones even the chefs in restaurant uses them. Is far too much hard work and time consuming task.

I am rubbish with pastry. But there was something on Radio $ a month or two back that said much the same as jean88, for consistent results, use bought fresh / frozen pastry.

Even the 'experts' admitted that buying pastry yielded better results than even the most consistent chef, let alone the 'once a month' baker at home.

Sad, I know. But probably very true !!
