Cheesecake?

I have family coming over at the weekend and I would like to make a cheesecake. Does anyone have a really nice recipe (that's not to complicated!) that they could recommend?

My friend brought me a slice of cheesecake to work today as a gift thwt her husband had made, and it was yummy. It's a Nigella recipe so you can look it up if you like, but basically it's Philadelphia cheese, Nutella, on a base made with whatever biscuits you have in store, (in our case ginger nuts) and topped with toasted nuts. It was absolutely delicious and I will definitely be trying it myself. Not too sure of the exact quantities but I'm sure you will be able to find it online.
I do this one by eye so I don't have a recipe with many quantities!

Grind up 2 pkts ginger nut biscuits
Melt 250g butter.
Add to the biscuits and press into the bottom of a loose-bottom tin
Mix together 900g Philadelphia, 200g icing sugar, the juice and zest of 2 lemons until smooth. Pour onto the base and chill until needed. You can change the lemon for orange.

Another one I have is to make the base as before. Mix 600g of Philadelphia with a jar of Nutella. Pour onto the base and sprinkle chopped toasted hazelnuts over the top and chill until needed.

I used to make a lemon and kiwi baked cheesecake.

50g butter, 225g digestive biscuits, 25g caster sugar, one tablespoon of ground cinnamon - for the filling 2 eggs, seperated, 100g caster sugar, a tub of soft cheese (about 350g) the juice and zest of 1 lemon, 1 or 2 kiwi's, 150ml double cream.

melt butter and mix in the biscuit crumbs, sugar and cinnamon. Press mixture into a losse bottomed tin, then pop into fridge.
For filling, beat the egg yolks with the sugar until thick, then mix in the lemon rind and juice and the cheese. Whisk the egg whites then fold into the mixture. Whip the cream until it is quite stiff and again fold into the mixture. Peel the kiwis and slice thinly. Spoon all filling into the base and pop in oven at 160 degrees C for about an hour. Leave the cheesecake to cool down in the oven, and chill before serving.

I'm not a great cook, but I always manage to pull this one off!
Hi Vod, I have to say it was delicious. Very rich so a small slice goes a long way. Well it would usually go a long way unless you gave some to me lol!!!

This is Nigella's version....mine is just a little bit simplified and I do it my way if I have loads of different cheesecakes to make all using the same base. Nigella's recipe for the base is delicious.

Very easy to do....make a base from biscuits or buy a sweet pastry shell.

Whip up a tub or two of mascapone with some honey. Spread over the base.

Add sliced fruit of your choice on top of the mascapone....i slice strawberries in summer but often use tinned sliced peaches in winter.

Grate chocolate over the top

I made a banoffee cheesecake, using the same recipe for the base as V&C has posted.
For the topping, use two tins of caramel carnation and sliced bananas. Lush! :))
