How do you do your coconut rice?

Last batch I cooked turned out to be one congealed lump.

This pretty much covers it. Point 4 of the recipe: the steaming, is really important. I'd omit the shredded unsweetened coconut but definitely do the toasted coconut garnish:

Thanks, snags. That is the very recipe I went with earlier. Turned out lovely.
I only eat the food here and then report in which order of 'my favourite' it is, I rarely make it.... Except at christmas when I will be doing the cooking. And snags will be hoping McDonalds is open.

I tried the red curry tonight and it was lovely. The rice turned out okay too.
