Does anyone know whether you can freeze fresh yeast? Asda will give it to you for nothing and this week I made some lovely bread the old fashioned way! I had about half the yeast that they gave me left over and just wondered what to do with it.

According to my freezer bible - yes. Freeze in 25g. portions, wrap well, and use after thawing for half-hour.

You can freeze fresh yeast, but it loses its strength. You will need 5 oz of frozen for a recipe which calls for 4 oz of fresh, for instance.
Let it defrost gradually, don't microwave it.
