''Butt is the front shoulder of the pig. It's a little confusing as most people would tend to think it comes from the end. The rear is ham. Shoulder needs long slow cooking to break down connective tissue.''

On an American show on Food Network on Sky Diners, Drive ins and Dives they often have pulled pork. They often use pork shoulder as well as the pork butt - I think it's maybe the park that we use for making a gammon joint. The secret is in the rub they use and a long slow cooking time. If it helps this show is on at 10.00 in the evening and barely an episode goes by without some pulled pork
