I bought some pork fillet with the idea of making my normal stroganoff type dish but decided I fancy something different. Anyone got any nice pork fillet recipes? I've got a fairly well stocked store cupboard plus fresh veg and apples. The only thing I haven't got is calvados.

I could casserole it, roast it, stuff it etc and there are some nice recipes on the internet, but what recipes do you guys like?

Casserole it in cider?
I marinade the fillet in olive oil, garlic, white wine, lemon juice, rosemary and a bay leaf.
Cook it in the oven for around 25 mins
*marinate!

Am liking the cider idea........
mine involves a slow cooker so may not be suitable if you want for this evening.
finely chopped onion, celery at bottom of SC, port fillet covered in well seasoned flour (fair bit of flour) on top and sliced mushrooms -herbs if req'd- boiling stock to cover - cook on high for five hours or so - just before ready add either double cream or yoghurt -

Sounds lovely RSVP. I do have a slow cooker, but its a school night so it needs to be an early supper tonight.
Dice some onions and mushrooms and fry in little oil with some mixed herbs - allow to cool. Cut the fillet in half lengthways and make a 'sandwich' with the onions etc.

Wrap the stuffed fillet in bacon and roast for about an hour.

Ouzel, that sounds delicious! Unfortunately, we are now half way through. Browned the fillets, removed. Softened some onions and deglazed pan with cider vinegar. Added fillets to onions and a shed load of cider and a bay leaf. Will stick in oven in a mo and then add some apples. When I take it out will reduce cooking liquid, and stir in some cream and possibly some mustard and see how it turns out.

good vinegar,brown sugar,tom puree, smidge of chilli,3 tbs water....slow cooker......perfect sweet and sour pork.......yumsy yumsy
Or flatten it (cling film and a rolling pin) salt and pepper hey presto 2 minute shnitzel where dya live im hungry.mmmmmmmmmmmmmmmmm

Redhelen, I know you are on holiday but your timing is broccoli. That sounds wonderful.

OK, so I cooked it in the oven, took the fillets out of the casserole and kept them warm,strained the sauce and reduced it. Then added some single cream and some more seasoning and a little tarragon and whole grain mustard. Stuck the onions and apples on a plate, sliced pork on top, some boulangere spuds and some fresh veg from the garden with sauce on top. Oh said it was fantastic. (OH doesn't know he has his favourite for pudding yet!).
