Pork Fillet And Apricots

At Mr BM'S request I'm doing pork fillet stuffed with apricots, and other dried fruit. I might soak the fruit in cointreau first. Normally I'd just make a gravy but it needs to be a bit more special. Any ideas as to a sauce or gravy, please?

Pork goes well with cider...

But would cider go with the rich dried fruit?
I use it instead of Cointreau and in the gravy as well. What other fruit would you use?

Probably raisins or sultanas. Might put some prunes in it. I normally just stick in whatever I've got open in the cupboard.
I also use cider with pork - e.g. Somerset Pork which includes a Granny Smith apple. I have used apricots with port and the cider went well, I thought.

I was going to suggest cider and cream...but the ginger wine sounds divine.

Doesn't it, Pasta? I didn't really want to do pork but he requested it. I was feeling desperately uninspired but it sounds yummy.
Don't forget garlic...lots.
Sauteed shallots would be nice with it.
