Toffee apples!

how would one go baout making these?! i've just successfully made some honeycomb which is delicious! so am wanting a recipe to make these for bonfire night!

Use small Gala apples for this, as they are the most suitable. As you bite through the toffee, you need an apple that isn't too hard. You will need:

3 ounces of Syrup
6 ounces of Light Brown Sugar
Half an ounce of Butter
Two and a Half fluid ounces of Water
Half a teaspoon of Lemon Juice

Wash the apples and put a wooden stick through each one.
Heat the above ingredients together in a pan until dissolved.
Bring up to the boil
Boil for a few minutes then start testing drops of toffee in ice-cold water until a small string of toffee snaps in half. Make sure it snaps and not just bends.
Dip each apple in the toffee, then immediately into ice cold water, shake off excess water, and leave them to set on a greased tray.

sorry if i sound a bit thick but what kind of wooden sticks would be best? like lolly pop sticks? and where from?
also how do you get them through the apple?? x

The sticks I used were bought from a proper kitchenware shop and were for the purpose. I don't see any reason why wooden lolly sticks shouldn't be ok. Gala apples are soft enough to just push them in through the centre of the apple. (Remove the stem, and push the stick in halfway, until holding firm, the apple will be upside down). Make sure they are holding them firm and not wobbling about. You need the stick to hold, when dipping them into scalding hot toffee. Although when the toffee has set on them and gone cold, If your lolly sticks didn't hold, I am sure it would be no big deal to use a plate and your hands to eat them, - just a bit sticky.

Actually, I haven't written down how many apples this toffe will coat.

I used to make these for my two children, but haven't made them for a while. I guess about four, depending on the size of the apples. Make some notes when you make it, as to how many it made and if you need to double up next time. I don't think it made a lot, it was just done for our maximum four people, using small apples.

At bonfire time, I used to get the children to make their own toffee apples and treacle toffee. The results were not the main goal, just that I included them in the activites and that they had fun.

When the apples are done and set and you hold them by the stick - in front of you, the apple should be upside down.

Sticks should be available from places that sell bakeware, supermarkets, small shops or market stalls.
