can an employer change your pay day ie- from weekly to fortnightly with giving any notification?

Generally this sort of thing will be covered in the small print of the contract you signed when they hired you so if they are doing it then you can bet they can. Usually though they would give notice for this sort of change.
Yes, as long as the employer gives you prior notice of the change and meets the payday requirements of the law.
A Good Employer would advance the extra week pay and recover it when you leave having given your required notice.
