As long as you are exercising regularly, you should find you are able to eat more than you did when you were aiming to lose weight. I did a similar thing to you a couple of years ago, and now I find I can openly enjoy food more (i.e. not be 'attacked' by people for being the large person eating a lot), so do find I eat more than I used to and haven't put on any weight because I am maintaining my exercise regime. - You should be able to do a search online and find a calculator that tells you how much you can eat and how much exercise you need to do to maintain your weight. - You should definitely be continuing with your exercise regime as I am sure you will have noticed other benefits to this other than weight loss?
Yes it can different factors such as training, sleep, diet and supplements and drugs can speed it up. Sometimes weighing yourself is not a good gauge of of all those hours you put away at the gym as many lose fat and gain muscle and look and feel better though there is no change on the scales.
