Dogfish meat.

Huss seems to be a local term.  When I lived in Brighton, you could get huss and chips at the local chippie.  When I moved to Fife, no-one knew what it was.  A local fishmonger tried selling it about 5 years ago and no-one bought it because it was an unknown.  It then hung around on the slab too long and started to get an ammonia whiff about it, putting even more people off.  That shop has not had it for sale since.

Huss is an excellent fish if you can obtain it fresh from a local fisherman.

huss is lovely, my mum is from Brighton and we always call it huss, is boneless apart from a thick spine that is easily removed.
I'm from Sussex too, our fishmonger told me that Huss is a name made up because Dogfish wouldn't sell.
I live in Essex - we call it rock eel but it is also called rock salmon. I have worked in the North and in Scotland and have not been able to get it there
