How unkind of them to treat your question with mockery. I can't help you on the strangulation, but they will turn red if you boil them, just like prawns and lobsters. Then you can butterfly and batter them or just pop them back into their caps serve as you would escargot. Delicious with fairy bread and Smurfoff bloody marys.
