With al the squit being talked about gender identity and racial discrimination why do we still have to put on forms what sex/ethnicity we are? If we are indeed all equal why does it matter?

Good question.
Mostly it is so organisations can collect the data and ensure that there is no evidence of discrimination.

If Miss A claims she didn't get the job/service/whatever because she is a black/white/whatever or woman/transgender or lesbian/bi/whatever it is easier to disprove if you have the stats
also, if you ran a universal service, yet found that 99% of the people who paid for your service were white women (or black men), you ight want to try to increase your take up in non-white non-women (or non black non men) to increase your profits. Yet you might not know unless you asked
If you ran a service where 90 % of your clients were white, then surely that proves your service is more attractive to white people. Why waste your time trying to promote it to people who were not interested? For example, take braiding. Black women use braids all the time, white women don't no amount of research would change that fact.

But why is it relevant for say bank accounts?
Its not relevant and no one is obliged to say, it's not obligatory.
