The photographer did well to keep the cat sitting still ( took some time for the film to expose back in the day ).
That's a lovely picture!

Getting a cat to stay still long enough to take a picture with a modern camera is difficult enough but getting it to stay still in the days when really long exposures were required is amazing!

I've run that photo through some AI image processing software to see what the cat really looked like:

See my colourised image, Tony. The AI software is remarkably good at working out real colours from black-&-white images. (Take a look at the cat's eyes and nose, for example). So I think that it was actually a white cat but with parts of it appearing grey simply because they were in the shadows.
See what you mean, Chris. Most probably White ( Red collar suits him / her ).

Jno, that's an interesting and informative addition to the OP.
the cats in most of those older photos are asleep - they'd have to be otherwise they would never have held still enough for the long exposures required in early photos. The 1845 cat's up and about but a bit blurry.

It obviously never was the oldest photo of a cat in history but I liked it so posted it.
