I can't view the video, but I'm wondering if you are using two mics, on for your voice and one for the instruments?
Using two mics through a mixer would be a better option, you can put headphones on to get a taster of the levels before the recording.
I have a mixer and usually forget to remove a little echo before uploading my songs to youtube and it all goes echo crazy.
